Madilyn here, on 1 Cup of Sugar! I think I've decied to be a fegan. i know what your thinking. 'Doesn't she mean vegan?' Nope. I'm now a fegan. And you can be one too! A fegan is a fake vegan. Which means, you can eat whatever you want! I love being a fegan! Story time! I have a little story to tell you.
It's time to reveal what happens at the grocery store. Odd subject, but we all know it's true that we are all asking ourselves, "Do I want to go down the sweets isle?" But for some reason, the temtation is too strong, you go down the isle anyway. you pick up a package of mini donuts, unsure of which to get. Chocolate, or powdered sugar.... hmmmm. You decide on powdered sugar, and you convince yourself that the donuts are for your kids' big day. The breakfast before their Science Fair. You go home, thinking about the mini powdered sugar donuts, asking yourself, did I really want to buy it? You end up eat 4 out of the 6 mini donuts, and regret the whole thing.
A few weeks later, you are back at the grocery store, and you come upon the sweets isle once again. You go down the isle thinking, "I'll get something speical for my kids. Anyway, I do feel guilty eating over half their donuts." You keep that thought in your mind, 'for the kids,' 'for the kids'. You buy oatmeal cream pies, and when you get home, your stomach starts to growl. You say to yourself, "I'll have one. But only one." Your 'diet' isn't going as well as you liked. So you quit the diet all because of a measly bag of powdered sugar donuts. I know this has absolutly nothing to do with the picture above, but I thought that it was a good idea for the post. Anyway, I hope that story insires you to become a fegan!
Everyone knows that Hostess Cupcakes are not healthy. Have you seen what's in the ingredients list? I can only read like two of the nasty ingredients! Let's get down to buisness! I have a
Homemade Hostess Cupcakes
Ingredients:2 dozen Devils Food Cupcakes, baked and cooled
Filling:
3 cups powdered sugar
1/4 teaspoon salt
1 teaspoon vanilla
1/2 cup boiling water
1 1/2 cup vegetable shortening
6 Tablespoons cold butter, cut into pieces
Glaze:
1 can of chocolate frosting
1 can of vanilla frosting, for squiggles
Directions:
1. For the Filling: In the bowl of a mixer, combine powdered sugar, salt, and vanilla. Add boiling water and whip with the whisk attachment on medium low speed until smooth and cool. Add shortening and butter and beat on medium low until combined. Increase speed to medium high and beat for about 4-5 minutes, until smooth, fluffy, and doubled in volume.
2. Fill Cupcakes: You can use a piping bag and tip, or cut a hole with a knife, fill with a spoon, and place the cut out cake back on top to cover.3. For the Glaze: Remove lid and foil from frosting and microwave on high for about a minute, stirring every 15 seconds until it is the consistency of hot fudge. Dip the tops of the cupcakes in the frosting, holding upside down to allow excess to drip off so they aren’t messy.
4. Once frosting has cooled and firmed up, pipe squiggles on with canned white frosting (or remaining filling).
